Hanging weight is the carcass weight used for pricing. It is not live weight, and it is not the packaged weight you take home. Packaged meat weighs less after cutting and trimming, and choices like bone-in versus boneless change it too.
Your actual price is the actual hanging weight times $8.50 per pound. Processing is included; there is no separate standard processing fee. The weight is not known until it is measured.
